Which instrument to set for playback?

It's more difficult to match a pitch to the piano than to something like voice, cello or violin. Is there particular benefit to practicing with a sound where the main pitch is more difficult to isolate? I play the violin.

Hello,

You can easily change the sounds played by EarMaster. We chose the piano as default, because that's the one you would meet in most classrooms. But other options are available.

Go to EarMaster's preferences and find the Keyboard or String settings tab. There you can select other sounds among the 100+ built-in sounds.
