Handclaps are a bad sound to use for rhythm dictation. A clap has very limited sustain. A human can't audibly tell the difference between a hand-clapping of a quarter note compared to an eight-note followed by an eight rest.

Hello,
In some lessons, a hand clap is used because only your timing is evaluated. In other lessons, a piano sound is used instead if the lesson includes that note durations are also evaluated. In customized mode, you can switch between hand clap and piano sounds in the Exercise Options with the option "Evaluate note length".
Please noticed that most unpitched percussions don't play durations. So when you clap a rhythm in your hands or play it on a snare drum, it will be exactly like in EarMaster, and that's what we are trying to emulate.

I would like to add that you could choose other percussion instruments for these exercises. The hand claps are just the default sound.
